Nurtured by the rich cultural heritage, generations of skilled craftsmen have created a wide variety of snacks with different flavors. And "Xingjia Guozi burrito" outshines others.

Guozi burrito is a dish consisting of an egg-yellow flour pancake wrapped into a sealed shape. Typically, the burrito is filled with meat or eggs, which is delicious and fragrant.It is famous for being delicate, crispy but not hard, fragrant but not greasy, fresh and delicious, and thus is suitable for all ages.Xingjia Guozi burrito is a representative genre,which was founded by Xing Zhenhai in Xiguan Village, Bincheng in the late Qing Dynasty.In 2013, the craftsmanship of Xingjia Guozi burrito was included in Shandong provincial intangible cultural heritage.

The original way of making Guozi burrito is to make two small pancakes with soft dough, and fry them till they’re yellow.Then the pancakes are wrapped into a sealed shape and filled with eggs, cooked meat, tofu, and coriander. After that, the wrapped package is fried a little bit, and cut into small pieces.

The fillings absorb the essence of stir-fries and accessories and main ingredients can be added and chosen according to different tastes and requirements of diners.To date, the varieties of Xingjia Guozi burrito have developed from the traditional hog face meat filling to over 10 kinds of fillings, which could be divided into three categories: meat, vegetarian food and seafood.

Binzhou Guozi burrito is a combination of pasta and dishes. It seems that the burrito could wrap everything, and it’s really delicious and rich in flavor.Guozi burrito also wraps the unique historical heritage of a city, demonstrating the tolerance and enthusiasm of the people in Binzhou.

滨州历史文化悠久,是黄河文化和齐文化的发祥地之一。浓厚的文化底蕴,孕育了灿烂的饮食文化,一代代能工巧匠,创造出种类繁多、风味各异的特色风味小吃——“邢家锅子饼”就是其中的佼佼者。

锅子饼是指用单饼卷肉或蛋的食品,呈蛋黄色,饼美味香。以其做法精细,食之酥而不硬、香而不腻、味鲜可口、老少咸宜而久负盛名。

邢家锅子饼是滨州锅子饼的代表流派,由滨城西关村邢振海于清朝末年初创,历经百年风雨。2013年,邢家锅子饼制作技艺被列入省级非物质文化遗产名录。

锅子饼的最原始做法是先用软面做两个小饼,烙黄备用,再用鸡蛋、熟肉、豆腐、香菜制馅,卷入饼中,稍煎,切成块食。其馅料吸收了炒菜的精华和特点,可根据食者的不同口味和要求添加辅料和选择主料。目前,邢家锅子饼经营品种由传统单一的猪头肉馅,发展成为荤、素、海鲜三大系列的10多种馅料。

滨州锅子饼集面食、菜肴于一体,一张饼像包罗了世间万象一样,味美可口,层次丰富。锅子饼也包裹了一座城市特有的历史传承,彰显了滨州人民的包容与热情。
